People sometimes inquire as to where I get my recipe inspiration. The response is all over the place. Something I see on the cover of a magazine, a dish I hear discussed in a movie, or even a random craving can inspire me, and I frequently get ideas from restaurant dishes.
I've been hooked on their new-ish spicy Korean beef noodles since a Noodles & Co restaurant opened about 4 minutes from our place. Although I wouldn't call this a copycat recipe, it was clearly influenced by the restaurant's menu item and shares many of the same flavours. If you like spicy Asian noodle bowls like I do, you'll love this.
Now for the procedure.... Before you make this dish, marinate your beef for at least 30 minutes. If you plan ahead of time, marinating it overnight will give it a better flavour, but even 10 minutes in the marinade will suffice if you are short on time.
Take them or leave them when it comes to mushrooms. My husband isn't a fan of mushrooms, so I'll either leave them out of his meal or cut them into thick slices and let him pick them out (and usually put them on my plate cause YUM).
This is truly a one-pan meal, which I really appreciate. You sear the steak in a skillet, then transfer it to a cutting board to rest while you cook the ramen noodles, onions, mushrooms, and seasonings in the same pan. The steak should then be thinly sliced and returned to the pan with some spicy Korean sauce. That concludes our discussion. Serve this spicy Asian beef and noodle goodness with some sliced green onions or fresh cilantro on top. That's it, Monday.
