Spicy Korean Beef Ramen Noodles: An Easy One-Pan Recipe

People often ask where my recipe inspiration comes from, and honestly it comes from everywhere: a magazine cover, a dish mentioned in a film, a sudden craving, or a plate I loved at a restaurant.

A noodle bar near us used to serve a bowl I could not stop thinking about, and I have been chasing that flavour at home ever since with Korean noodles and pantry staples. Now for the method. Marinate the beef for at least 30 minutes before you start. Marinating overnight gives the best flavour, but even 10 minutes in the marinade will do if you are short on time.

Mushrooms are optional. My husband is not a fan, so I either leave them out of his bowl or slice them thick so he can pick them out (and they usually end up on my plate).

This really is a one-pan meal, which I love. Sear the steak in a skillet, then move it to a cutting board to rest while you cook the ramen noodles, onions, mushrooms, and seasonings in the same pan. Thinly slice the steak, return it to the pan, and toss everything with the spicy Korean sauce. Finish with sliced green onions or fresh coriander on top, and dinner is done.

A few notes before you start cooking

All of the heat comes from the sauce, so start with less gochujang than you think you want and stir more in at the end. As written the dish is properly spicy, which makes it one for adults and older children rather than young children.
