How Popping Candy Works, and Is It Safe for Children?
Popping candy works because tiny bubbles of carbon dioxide are locked inside hard sugar crystals under high pressure. When a piece meets the warm saliva in your mouth, the sugar dissolves, the thin walls around each bubble give way, and the gas escapes with a crackle you can hear. That is the whole trick: no chemical reaction, no fizzing powder, just gas that was trapped during cooking and released by moisture. For most children over four it is a normal sweet treat, eaten in small amounts. How does popping candy work?
The method goes back to a United States patent filed in 1959 by Leon Kremzner and William A. Mitchell for General Foods. Their gasified confection patent describes melting a sugar mix, then holding it in contact with carbon dioxide at 50 to 1,000 pounds per square inch, with 400 to 800 as the preferred range. The mixture is cooled under that pressure, so the gas has nowhere to go and sets inside the candy as microscopic pockets.
The patent puts the finished candy at roughly 0.5 to 5 ml of carbon dioxide per gram. It also describes exactly what you hear: placed in the mouth, the product disintegrates with a mild popping sound and releases gas as it dissolves. Each pop is one bubble breaking free.

Moisture is what sets the pop off, so moisture before you eat it is the enemy. Damp air slowly dissolves the surface of the crystals, the bubbles near the surface escape early, and the candy turns sticky and quiet. In practice, that means a few simple habits for shops and homes:
- Keep cartons indoors in air conditioning, not in a hot store room, a car boot or a sunny window display.

- If you sprinkle popping candy on a dessert or a drink rim, add it at the last moment, because cream, ice and condensation start the popping straight away.
Is popping candy safe for children?
Popping candy is made from ordinary food ingredients, and the carbon dioxide in it is the same gas that puts the bubbles in a soft drink. The amount in a small pack is modest, and it escapes a little at a time as the sugar dissolves. The real safety question for families is age, not the pop.
The American Academy of Pediatrics lists hard, gooey or sticky candy among the foods to keep away from young children until 4 years of age or older, depending on each child's development, in its choking prevention guidance. Popping candy comes as small crystals rather than one large piece, but it is still hard candy, so the same caution is sensible. For older children, a few sensible rules help:
- Let them eat it sitting down, not while running around at a party.
