Coconut Water Wholesale in the UAE: A Guide for Cafes and Juice Bars

Fresh green coconuts look good on a counter, and some customers will always ask for one. As a menu base they are harder work. Each nut has to be opened by hand, the amount of water varies from nut to nut, and the water does not keep once it is out. A canned base solves the three problems a busy counter actually has:

Per 100ml, the certificate of analysis shows 5.8 g of total sugars, all of them the coconut's own, with added sugars at zero, plus 90 mg of potassium and 30 mg of sodium. That makes it a lightly sweet base. The sugars are natural ones from the coconut, so describe it on your menu as what it is: coconut water with pulp, nothing added.

1. Coconut cooler. Cold coconut water poured over ice with a squeeze of fresh lime and a few mint leaves. It needs no blender and takes seconds, so it works on the busiest counter.
2. Smoothie base. Use coconut water instead of plain water or apple juice as the liquid in mango, pineapple or banana smoothies. The pulp adds body and the drink is already lightly sweet, so taste before you add any syrup.
3. Coconut iced coffee. A shot of espresso over a glass of ice, topped up with cold coconut water. The coconut softens the coffee without milk, which gives you a dairy free option on the menu.

Whatever you make, shake each can gently before opening. The pulp settles while cans stand, and an unshaken can pours thin with the best part left at the bottom.

• Keep unopened cartons dry, cool and out of direct sunlight. A store room that gets hot in August is what quietly shortens shelf life.
• Rotate stock so the oldest carton opens first.
• Chill cans before service. Coconut water at room temperature tastes flat, while the same can from the fridge tastes clean and lightly sweet.
• Once a can is open, treat it like fresh juice: keep it covered and cold, and use it quickly.
