Dulzer Ingredients for UAE Bakeries and Food Factories: Cocoa, Colours and Emulsifier by the Bag and Drum

Seoul Oasis 5 min read

A food ingredients supplier in the UAE is judged on three things: whether the grade you specified arrives every time, whether the paperwork comes with it, and whether someone answers when a batch behaves differently. Dulzer is the ingredient line Seoul Oasis supplies to bakeries, pastry kitchens, confectioners, beverage producers and food factories across the country. It covers alkalized and natural cocoa powder in 25kg bags, food colours in 10kg drums and 25kg bags, and a soya lecithin emulsifier in a 240kg drum. Every item is halal, handled under HACCP food safety controls and compliant with UAE food import standards, and a certificate of analysis for the current batch is available on request before you order. This page is the map of the range: who each product is for, how the three groups fit together, how trade ordering works, and what to send us when you enquire so the first reply is a usable one.

Who buys Dulzer, and for what

  • Bakeries and pastry kitchens take cocoa for sponges, brownies and fillings, and colour powders for icings, dry mixes and biscuit creams.
  • Confectionery and chocolate makers take cocoa for coatings and fillings, lake colours for compound chocolate and fat-based centres, and lecithin as the emulsifier that controls viscosity in a chocolate mass.
  • Beverage producers and cafe chains take alkalized cocoa for hot chocolate and ready-to-drink mixes, and water-soluble colours for syrups and soft drinks.
  • Snack, dairy and dessert factories take colours for seasonings and coatings, and cocoa for ice cream, puddings and flavoured milk.

The common thread is production scale. Dulzer is packed for a store room and a dosing scale, not a kitchen cupboard, which is why the smallest cocoa unit is a 25kg bag and the smallest colour unit is a 10kg drum.

Cocoa powder: choosing a grade

Dulzer cocoa carries around 11 to 12 percent fat according to its certificate of analysis, which places it in the standard band most bakeries and drink lines buy. The grades differ in colour and in how far they have been alkalized. PA50 is the darkest and the natural choice for brownies, dark cakes and hot chocolate; it also covers the grade formerly sold as AD01. AD60 gives a warm reddish brown. FA10 is the all-round alkalized brown for mixes and confectionery. GN20 is natural, lighter and sharper, and pairs with recipes built around baking soda. LB05 is the mild light brown for milk drinks and lighter bakes, currently restocking. Two guides go deeper: the cocoa powder supplier guide lists every grade, and the dark cocoa guide explains what alkalization does to colour in the oven and the cup.

Food colours: lake or water-soluble

Nine of the eleven Dulzer colours are lakes. A lake pigment does not dissolve; it disperses through fat, which is why lakes are the colours for compound chocolate, coatings, cream fillings and fat-based icings, and why they resist bleeding between layers. The two water-soluble powders, tartrazine and sunset yellow, are for syrups, soft drinks, jellies, sauces and dry seasonings, where the colour has to dissolve in water. Choosing between them is a question of what phase your product is in, not of shade. The food colour powders guide covers the full list, and the red colours comparison shows how the three reds differ in tone.

Soya lecithin: the emulsifier in the range

Soya lecithin is the standard emulsifier of the chocolate and bakery trade. In a chocolate mass it lowers viscosity so the mass flows and coats at a lower cocoa butter addition; in doughs and batters it improves the blending of fat and water and the handling of the dough. Dulzer supplies it in a 240kg drum, which is a factory unit, and it is the product in the range most often bought on a standing order rather than one at a time.

How trade ordering works with Seoul Oasis

  1. Documents first. Ask for the certificate of analysis for the current batch before you order; it is available on request for every Dulzer product, together with the halal documentation your own quality file needs.
  2. Order online or by transfer. Every product is on the store with its price. Pay at checkout, or choose bank transfer to our company account, which is how most factories and bakeries settle.
  3. Delivery. Free across the UAE on orders above AED 300. Pallet quantities and standing weekly or monthly orders are arranged with the wholesale team through the contact page.
  4. Samples. A development sample for your test kitchen can be arranged through the same route; tell us the grade and the application.

What to send us when you enquire

A complete first message saves a week of back and forth. Include:

  • The product and grade, or the application if you do not yet know the grade (for example, dark crumb for brownies, or a red for a fat-based coating).
  • Your approximate monthly volume, so we can tell you whether a bag, a drum or a pallet is the right unit.
  • The emirate and the type of premises for delivery.
  • The documents your quality system needs: certificate of analysis, halal certificate, specification sheet.
  • Whether you want a sample first, and the date you need production stock by.
