Product description
Dulzer Soya Lecithin Emulsifier, 240kg Drum
Dulzer soya lecithin is a food grade emulsifier derived from soybeans, supplied in a 240kg drum for bulk food manufacturing. It is intended for UAE bakeries, chocolate and confectionery producers, and food factories that use lecithin in regular production.
What soya lecithin does
Oil based and water based ingredients do not mix on their own. Soya lecithin is an emulsifier: it helps these ingredients combine and stay combined, so a mix holds together during processing. It is also used as a dispersing and wetting agent, helping powders spread evenly through liquids.
Common uses
- Chocolate and confectionery: used in chocolate and compound coatings, where it helps control how the mass flows.
- Baked goods: used in breads, cakes and biscuits, and in dough and batter systems.
- Margarine and spreads: helps keep the fat and water phases together.
- Instant drinks and powdered mixes: helps powders wet and disperse when mixed with liquid.
- Creamers, fillings and dairy style products: helps keep emulsions uniform.
The right dosage depends on your recipe and process. We recommend a trial batch before moving it into full production.
